Trained in Italy and with a background in fine dining, Brian has been serving authentic wood-fired pizzas since 2018. Using slow-fermented dough, local Welsh produce, and a traditional oven, his pizzas bring a taste of Italy to Y Maes and beyond.

What started as Tom’s lockdown project — delivering smoothies around Caernarfon from his car — has grown into a thriving local brand. Alongside the original smoothie van, Swig now serves up fresh, flavour-packed smoothies and tasty treats at Y Maes, staying true to their motto: nutritious and delicious.
